Internet outage reoccurring for weeks

Approximately two weeks ago the cell/mobile data signal on my ATT hotspot (MR6500) began randomly losing connection,  yet at the same time showing full bars.

It eventually reconnects in its own, maybe after 10 minutes, maybe after an hour or more. Rebooting it doesn't fix the issue.

Now here's the strange part...

I have a Samsung S23 Ultra that is doing the same thing, at the same exact time. This phone uses ATT towers, but is through Straigh Talk.

Mobile Data returns to both at the same time also. I cannot figure out how to troubleshoot this. The phone is not connected to the hotspot.  Both devices just lose internet,  both independently connected moments earlier, at the same second and some random amount of time later regain it.

It was maybe once a day, but it's increasing in frequency and duration.  I live in a rural area, less than a dozen neighbors nearby. The signal and internet have been good for years. It happens early morning , mid day , no consistency every day of the week.

If both devices were through ATT, I'd think somethings up with my account maybe, but like I said, the only common denominator is ATT towers as far as I see.

My pc is the only device using the hotspot, I went as far as to replace the wifi adapter.

I had two friends over, their cells dropped mobile data at one point. Oddly enough, so did the hotspot mobile data,  and do did my cell mobile data. Everything shows full bars during the entire outages.

What could be the issue?

We recommend you to run a few troubleshooting steps outlined below:

Ok, all devices are up to date. All devices get rebooted multiple times per day to try and help reconnect,  it does not help.

The phone is only using ATT towers, it is an unlocked phone through Straight Talk.

The hotspot is one I pay monthly for my business/animal rescue through ATT.

If the hotspot loses mobile data, then I cannot connect the phone to it and use wifi calling, as that means there's no internet...

Both devices lose mobile data, yet show full bars at the same exact moment. The duration is seemingly random.  According to your map, I am in a 5g area.

If someone stops by during one of the times I have no mobile data, their devices have the same issue. I brought a similar hotspot home from work, same issue.

I want to clarify that the devices do nor need to be connected. My phone will lose mobile data and is not on my hotspot wifi. My hotspot is a Nighthawk MR6500, I am not referring to the built in hotspot on my Samsung.

This is classic deprioritization.  And since you're using a phone on an MVNO, that also would be subject to deprioritization.  This happens anytime service in your area is heavily congested.
You mentioned it happens in the morning, and again at midday..  Not exactly typical primetime usage but that doesn't mean that that's not when everyone in your area who uses AT&T for service is not hopping on their phones.
(FYI, it does not matter whether you are an AT&T customer if your service is AT&T through an MVNO you are (1) deprioritized, (2)  still using AT&T)

It happens pretty much anytime I use the internet for more than a few minutes. I might be shopping on Amazon, the MR6500 drops

I figure I'll just grab my phone and finish, it too will be offline.

Not sure why with the very tiny population here, and considering many rarely use the internet, it's mostly hunters and such, that it could even get that congested.

I don't get throttled, it's a complete disconnect. I need to ask neighbors and see if they're being hit, or it's just me.

It's not just morning or mid day, its pretty much anytime (lately) I'm online for more than 30mins or an hour. Tried looking into other carriers, but sadly it's ATT or Starlink.
