The simple answer is for 5.1 audio you have to either use an optical cable from your tv to the receiver (I'm assuming that's what you have) or use ARC using an HDMI cable. To switch from the tv's speakers to the 5.1 system you have to switch Source inputs, tv speaker to optical out or ARC to the appropriate input on your receiver (optical or ARC). To do so you need to program the tv and receiver and your remote has to have the ability to switch input sources. Most OEM remotes don't have that ability to do that without setting up CEC, which has lots of issues, or you can use a programable remote like a Harmony.
