My iPhones data use is out of control.

I’ve started monitoring my data use - for example - my phone used over 2 GB when I am at work (3pm) what could possibly use that any t of data? And then again at 12am?

That information is on your phone, in settings. And is independent of any reporting on AT&t's end. It'll tell you exactly which application or service used data, and how much.  It's typically reported in kilobytes, then megabytes and only then gigabytes.

Since you have an iPhone, It accumulates data until you clear the data totals. If you have never cleared the data totals it will have totals from when you first got the phone.  You can reset data statistics at the beginning of a Bill cycle to see how much you typically use.

Data accumulated and posted in your online account is frequently done in batches every 3 hours.  It is not unusual for the bulk of data to be reported and posted on your online account, after your phone is no longer connected to the cellular network, But overnight when your phone is connected to Wi-Fi.
