Only calls and texts sent through AT&T’s servers show up. Texts sent through iMessage, FB messenger, or other apps don’t show up, and neither do calls sent through apps like Skype. Are you getting any calls or texts through apps?

Add RCS (Google RCS or any other implementation or server) to the list of things that will bypass the bills. Basically SMS and MMS will show up in the text log, if it's sent any other way, it will not.
