Apple Watch with Phone/International Day Plan
I am traveling to Japan and have added International Day Plan for my iPhone 15 Pro Max. I will be wearing an Apple Watch 8. I realize the watch cannot answer calls while I am abroad and I don't need it for texts. I just want the complications - date, calendar, step counter, battery level, etc. Will those work without incurring additional charges? If not, what settings do I need to turn on or turn off?

You turn off the data roaming in the watch app to be safe.
The rest should work with bluetooth connected to the phone like normal.

I don’t believe that your watch supports international roaming on AT&T. Pretty sure you can only add IDP to a phone, and not a wearable.
