Using an esim for the first time for a short trip outside the USA
I have an iPhone SE from 2020. A well meaning friend gifted me an esim that's good for 15 days for a short trip I'll be taking to France soon. However, I've never used an esim before and I've read online that my physical sim card will become obsolete once I activate an esim. This may sound very naive of me, but I don't want to lose my U.S. cell phone number because I used an esim for a short trip. How does this work and how do I go back to my regular cell number after my trip is over? Will I need to have a new physical sim card ready for my return? Using the AT&T International Day Use Pass feels like it would be less complicated, but I'd like to use this esim I was given if I'm able to.

No your physical SIM/sim slot is not obsolete. You should turn it off if you do not intend to use your AT&T service while outside the USA
The SE 2020 is a dual SIM phone. You will be adding a foreign phone number to the embedded SIM card for the use outside of the United States.
you can turn off one of the sim cards.
Go to setting:
Settings -> Cellular ->
In the "CELLUAR PLANS" section you will see both sim cards (plans), with "On" or "Off" by each. Click into the plan you want to turn off. You'll see "Turn Off This Line" and you can switch it off here.

Just an FYI if you do not turn off at least Data roaming on your AT&T SIM card you could be subject to very expensive and unfortunate charges.
Pay per use charges are very high and data in the background would be charged at the rate of $2.05 per MB
International day pass charges $10 per day.
(If you're prepaid none of this applies to you. Prepaid users have only select countries in which service will work at all, and prepaid roaming service must be paid in advance)
Make sure your phone is carrier unlocked before you leave the United States
