Setting up DNS and NginX for home lab (BGW320-505)

Good morning,

I have already read that the only way to "change" the DNS setting are to use IPPassthrough or manually point each device to my DNS device (tried that part but it is hit or miss if they use it).  My goal is to use a registered domain and have NginX handout certificates w/ LetsEncrypt to subdomains for my home lab (Plex, mincraft servers, Sonarr/Radarr etc...) without needing to port forward.  I don't mind the AT&T router responding to DHCP requests, just want NginX to deal with the certs.  I guess what I am really trying to figure out is if I need to even use IPPassthrough since I won't be using something like AdGuard or do I still need to?  If so, for Passthrough Mode would it be DHCPS-fixed for the AT&T router to handle request and the "Passthrough Fixed MAC Address" be the mac of the home lab where NginX is installed?

Thank you, that gives me something to run with.  I will be checking with our Network Engineers at my work and one of the System Engineers to double check everything before rolling it out.  I think I remember one of our SysEng guys talking about a home lab they set up and will ask him to do a once over.
