If I use proton.me mail to send a text to sms verizon, how will that show up on my AT&T bill? As an SMS text message with the phone number?

As far as you and your phone is concerned, you sent an e-mail.
As far as AT&T is concerned, you used some data, at best they know it went to a proton mail server so they could know it was an e-mail. They'd not even see the recipient list to know it was going to a Verizon SMS e-mail gateway.
Verizon transforms the e-mail into an SMS message and would count it as a text going to that phone.
